Try a Low Calorie Dessert with Vitamin C and Calcuim

Strawberry Yogurt Bites

Seems like we just recovered from pigging out during the last three holidays.   Now we’ve got the Super Bowl and Valentines Day just around the corner. You’ll  most likely blow your New Year’s diet on those days. Who am I kidding? We plan on eating those high carb, high fat dishes as part of the celebration. Don’t  blow that New Years diet just yet. Hold down those calories a bit with a  Strawberry Yogurt Bite.  An intense strawberry flavored dessert that’s cool and quenches that sweet tooth with a little vitamin C and calcium.
In the Kitchen
I live in the north so I wasn’t sure if I’d have to pay an arm and a leg for fresh Strawberries this time of year. Just so happens I caught them on sell for $2.00 a quart at a local market. Outside of the visual appeal, a cup of strawberries are packed with more vitamin C than an Orange. Combine a low fat or fat free strawberry yogurt with sugar free gelatin and  we’re on our way to a low cal, guilt free dessert bite. Go ahead and lick the spoon.

Remember the first part of our mantra is “Look Good” which is a priority.  This recipe is quick for the diva who needs to spend less time in the kitchen  and more time taking a beauty nap before that date. Fluff up a satin pillow and relax. It’s simple and cost very little to make so you can use your Christmas cash for shopping at a post holiday sale.

You’ll need:
3 6oz containers of low fat or fat free Strawberry Yogurt
8 Strawberries 
12 Foil Cupcake Liners 
1 3oz package of sugar free Strawberry flavored gelatin



Pour all 3 yogurt containers in a 2 quart size microwaveable bowl. Add the entire package of gelatin and stir well until you get a reddish color with no  white specks. Place the bowl in the microwave and set for 1 minute. After the  first minute, stir the mixture and place it back in the microwave. Repeat these  steps for a total cook time of 3 minutes, making sure to stir between each  minute. 

Pour even amounts into the cupcake liners. I used an ice cream scoop to  ensure that I had the measurements pretty even. Slice the eight strawberries in  half with the stems on. Place the filled liners on a cookie sheet and  refrigerate for an hour or until firm. I leaned more with two hours to ensure  firmness. Remove the cupcake liners and place the bites on a serving tray,  bottom side up. Place the strawberry slice on top. 
Your done!
Save one for lunch or serve the bites with a side of deli fresh deli chicken salad. Strawberries go bad fast so be sure to store the  bites in a sealed container. Trust me they won’t spoil. They’ll be gone in less  than two days.

Wow...what a fun and simple receipe, great for kids to try. I think I'll have my 10 year old cousin stop by and make some yogurt bites :o)
